Macaroni and Peas


This is a very simple recipe for a creamy pasta sauce. I’ve kept it very plain for little taste buds, but you could play with adding extra ingredients such as mushrooms, or onions and garlic, depending on taste. My two ate every last bit.

Mac ‘n’ Peas

Preparation time: 12 minutes

Contains: Nuts, wheat gluten, yeast

Serves: 4 small people, or 2 larger ones

Equipment:

Blender, ideally a high-speed one such as a Vita-mix. If using an ordinary blender, pre-soak the cashew nuts for at least 2 hours before processing.

Ingredients:

  • Wholemeal macaroni
  • 2 handfuls of cashew nuts
  • 1 teaspoon of nutritional yeast
  • Water
  • 2 handfuls of peas (fresh or frozen)

Method:

Boil the macaroni according to instructions (about 12 minutes), until soft. While this is cooking, put the cashew nuts, nutritional yeast and water (just enough to cover) into the blender and blend until smooth. Boil the peas (3-5 minutes). You may wish to prepare some raw vegetables of your choice, such as tomatoes, carrot sticks or cucumber, to go on the side. When the macaroni is cooked, drain and stir in the sauce. Heat through if desired, although for young children it should be warm enough without. Serve.
